Description
Lingonberry responds to long, bright days by producing an abundance of secondary metabolites. This characteristic becomes more pronounced during the northern summer, as the plants do not grow beyond their natural size despite the abundance of light.
The excess energy from the sun is converted into sweetness in the berries and, in the case of northern lingonberries, as anti-inflammatory polyphenols with a sour and bitter taste. The bright red color of northern lingonberries is due to the antioxidants they produce to combat environmental stress factors.
